In the spirit of seasonal cooking and seasonal busy-ness, here's a recipe for a very fast, very seasonal dinner. The amount here serves 2 adults. Make 2 for a family!
I used a Pillsbury puff pastry sheet as the crust. You can also use pizza dough (roll very thin) or any other crust you like, I'm sure. I slathered it with sour cream, then added a bunch of chopped, blanched swiss chards, a few halved cherry/grape tomatoes, and bits of fresh goat cheese.
Topped with a few shreds of leftover monterey jack, baked til it smelled delicious, and:
Voila, dinner!
